Cookies and cream protein + coconut flour pancakes 

We all love pancakes right? I know I do, but it’s hard to eat them often when the normal variations are so unhealthy and nothing but carbs and sugar. I was inspired to try a variation of my healthier banana pancakes that would include flour. The benefit is that they have a lot of protein in them, which will keep you fuller longer, and they’re still sweet because the protein powder lets you think so. They’re also more substantial than being pure sugar. 

The best part of these pancakes is that they’re healthy and so, so tasty. This time I used cookies and cream protein powder but in theory, you could use just about any flavour or protein powder that suits you. The recipe is also pretty interchangeable with bananas instead of flour, so I’ll share that variation too. 

Are you ready to have some healthy pancakes? Here we go…. 
Cookies and cream protein + coconut flour pancakes

  • 3 tbsp coconut flour
  • 1 scoop cookies and cream protein powder (mine is from Quest) 
  • 1 tsp baking powder 
  • 2 egg whites 
  • 1 tbsp vanilla extract 
  • Enough almond milk to absorb the dry ingredients 
  • OPTIONAL: make a larger recipe that you can share by using 6 tbsp coconut flour 

If you want banana pancakes instead… 

  • 2 ripe bananas, mashed
  • 2 egg whites 
  • 1 scoop of protein powder (I like it with vanilla, chocolate and cookies and cream) 
  • 1 tsp baking powder 
  • 1 tbsp vanilla extract
